It’s March already and It’s almost St. Patrick’s Day so, I’m giving you my recipe for Drunken Leprechaun Brownies. These are delicious, fun, and very easy to make. Of course, these brownies include one of my favorite liquors: Baileys Irish Cream.
Drunken Leprechaun Brownies
- 1 large Egg
- 1 box Ghirardelli Double Chocolate Brownie Mix
- 1/2 cup Baileys Irish Creme
- 1/3 cup Melted Coconut Oil
- 1 cup Marshmallows from Lucky Charms Cereal
Pour Ghirardelli Brownie Mix into the mixing bowl.
Crack 1 Large Egg into the bowl.
Pour 1/2 cup of Baileys Irish Creme into bowl.
Heat coconut oil in microwave until you can fill your 1/3 cup measuring cup.
Immediately, pour the 1/3 cup of melted Coconut oil into the bowl.
Promptly use your hand mixer to thoroughly mix ALL listed ingredients in the bowl.
Once all of the ingredients have been thoroughly mixed, pour the mixture into the greased square 9×9 baking pan.
Set oven temperature to 250 degrees and set your timer to 30 minutes.
Once 30 minutes have passed get your 1 cup of Lucky Charms Marshmallows and pour them on the brownie mixture.
Slightly pat down the Marshmallows with a spatula to insure that all of the marshmallows stay in place.
Place the Baking pan in the oven for another 20 minutes at 200 degrees. (Remember to set the timer).
Once the timer is done, check the consistency of your brownies. If you like them gooey like I do then VOILA they are done at this point. If you’d like them a little drier, place them in the oven for another 15 minutes.
